Ingredients

  • 60 ml neutral oil (grapeseed or sunflower) Provides flavor without overpowering.

For Assembly

  • 1 ball burrata (about 125 g) The star of the platter.
  • 2-3 tbsp pomegranate seeds Adds flavor and color.
  • Optional: micro herbs or edible flowers for garnish Enhances visual appeal.
  • to taste Cracked black pepper Adds warmth and spice.
  • Toasted sourdough, flatbread, or crackers Serves as the base for serving.

Instructions

Make the Pistachio Cloud

  • In a mixing bowl, blend together ricotta cheese, pistachio paste (or finely ground pistachios), and cream until airy and smooth.
  • Add a pinch of salt and a whisper of white pepper to taste.
  • Transfer the mixture to the refrigerator to chill until serving.

Make Pistachio Oil

  • In a small food processor, blend shelled pistachios with neutral oil until smooth.
  • Strain the oil through a fine mesh sieve or cheesecloth for a bright finish.

Assemble

  • Spread the whipped pistachio-ricotta mixture on a serving platter, shaping it into a fluffy cloud.
  • Nestle the burrata in the center of the cloud.

Finish

  • Drizzle the pistachio oil over the cloud and sprinkle the pomegranate seeds on top.
  • Add cracked black pepper and garnish with micro herbs or edible flowers.

Serve

  • Present the platter alongside toasted sourdough, flatbread, or crackers.
