Ingredients

Instructions

Prepare the Crust

  • Mix together the graham cracker crumbs, melted butter, and finely chopped pistachios in a bowl.
  • Press the mixture firmly into the bottom of mini cheesecake molds to form the crust.
  • Chill the crust in the refrigerator for 15 minutes to set.

Make the Cheesecake Layer

  • In a mixing bowl, beat the softened cream cheese until smooth.
  • Add in the powdered sugar and vanilla extract, then mix well.
  • Gradually fold in the melted white chocolate.
  • Gently incorporate the whipped cream, taking care to maintain an airy texture.
  • Spoon this mixture over the prepared crust and smooth the tops.
  • Chill this layer in the refrigerator for at least 1 hour.

Create the Pistachio Layer

  • In a small saucepan over low heat, warm the pistachio paste, milk, and honey until the mixture is smooth.
  • Stir in the bloomed gelatin until fully dissolved.
  • Pour this mixture over the cheesecake layer and chill until set, about 1-2 hours.

Decorate and Finish

  • Pipe swirls of sweetened whipped cream or cream cheese frosting on top.
  • Sprinkle crushed roasted pistachios over the whipped cream.
  • Garnish each dessert with a few whole pistachios.
