For the crust

Instructions

Make the crust

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  • Add the egg yolks, sour cream, and vanilla extract. Mix until the dough comes together.
  • Divide the dough in half, shape each half into discs, and chill in the refrigerator for 30 minutes.

Prepare the apple filling

  • Toss the thinly sliced apples with granulated sugar, ground cinnamon, lemon juice, and cornstarch (if using).
  • Let the mixture sit to allow the flavors to meld together.

Assemble the cake

  • Preheat your oven to 350°F (175°C). Line a 9x13-inch baking dish with parchment paper.
  • Press one disc of dough evenly into the bottom of the prepared dish.
  • Spread the apple mixture evenly over the crust.
  • Crumble the second disc of dough over the apple filling, pressing it lightly.

Bake and finish

  • Bake the cake for 45-50 minutes, until the top is golden brown and the filling is bubbling.
  • Allow the cake to cool completely in the pan, then dust generously with powdered sugar before serving.

Notes

For a balanced flavor, combine different types of apples. Consider adding chopped nuts into the filling for added texture. The cake can be made a day in advance and stored comfortably. Serve with vanilla ice cream or whipped cream for an extra treat.
