Instructions

Preparation

  • Combine all dry ingredients in a medium-sized bowl: rolled oats, finely chopped almonds, freeze-dried raspberries, shredded coconut, and chia seeds. Mix gently.
  • Add wet ingredients: almond butter, honey or maple syrup, and vanilla extract. Stir until the mixture turns into a sticky dough.
  • If the mixture is dry, add 1 to 2 tablespoons of water as necessary to bind.
  • Roll the mixture into bite-sized balls between your palms.
  • Place rolled bites on a lined baking sheet and refrigerate for 30 minutes to firm up.
  • Store the energy bites in an airtight container in the refrigerator for up to a week, or freeze for longer storage.
