Crumble Topping

Instructions

Preparation

  • In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the egg yolk and vanilla extract, mixing until smooth.
  • Stir in the flour, baking soda, and salt until just combined. Cover and chill the dough for 30 minutes.

Crumble Topping

  • In a small bowl, combine the crumble topping ingredients: flour, sugar, and cubed cold butter.
  • Rub the butter into the flour until it forms pea-sized crumbs.

Baking

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Roll the chilled dough into small balls and coat them in granulated sugar.
  • Press a deep indent into the center of each ball and fill with raspberry jam.
  • Sprinkle each cookie with the prepared crumble topping.
  • Bake for 10–12 minutes, or until the edges are golden and the centers are just set.
  • Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure your butter is softened, not melted. For extra flavor, add a pinch of lemon zest. Consider using different fruit jams for variations. Don't overbake for the best texture.
