Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine 1 cup of all-purpose flour, 2 tablespoons of sugar, and the cold butter cubes. Blend until crumbly.
  • Grease an 8x8-inch baking pan, then firmly press the mixture into the bottom to create an even crust.
  • Bake for 12-15 minutes until lightly golden.

Make the Custard Filling

  • In a bowl, beat together 2 large eggs, 1 cup of sugar, 1/4 cup of flour, and 1/4 teaspoon of salt until combined.
  • Gently stir in the chopped rhubarb.

Combine and Bake
