Instructions

Preparation

  • In a small pot, combine the chopped rhubarb, fresh grated ginger, sugar, and water.
  • Bring the mixture to a gentle simmer over medium heat, stirring occasionally for about 10 minutes.
  • Once the rhubarb is soft, strain the mixture using a fine mesh strainer into a bowl or pitcher.
  • Allow the syrup to cool to room temperature, then refrigerate to chill.

Assembly

  • Fill a glass with ice and pour over a few tablespoons of the chilled syrup.
  • Top the glass with sparkling water or tonic.
  • Garnish with a squeeze of lime and fresh mint leaves.

Notes

Adjust sweetness by varying the sugar. Use fresh rhubarb for best flavor. Substitute with powdered ginger if necessary. Chill your glasses for a refreshing experience. Make it a mocktail by omitting alcohol.
