Instructions

Preparation of Lemon Cups

  • Cut the lemons in half and scoop out the insides to create lemon cups.

Making the Mousse

  • In a mixing bowl, whisk together ricotta cheese, heavy cream, powdered sugar, and vanilla extract until smooth.
  • Gently fold in the raspberries, being careful not to crush them.

Assembly

  • Spoon the ricotta and raspberry mixture into the hollowed lemon cups.

Notes
