Instructions

Roasting the Beets

  • Preheat your oven to 400°F (200°C). Wrap each beet in foil, sealing them well to lock in moisture.
  • Roast them for 45–50 minutes until fork-tender, allowing the natural sweetness to develop.
  • Once cooked, let them cool slightly before unwrapping, peeling, and slicing into 1/2-inch thick rounds.

Caramelizing the Pears

  • In a sauté pan, heat the olive oil over medium heat.
  • Add the thin slices of the pear and drizzle honey over them.
  • Sauté for about 2 minutes per side until they turn a lovely golden brown.

Constructing the Towers

  • On a plate, place the first beet slice.
  • Add a layer of blue cheese followed by a caramelized pear slice.
  • Continue layering—beet, blue cheese, and pear—until you reach the desired height.
  • Finish with a layer of blue cheese on top.

Final Touches

  • Sprinkle toasted pecans over the towers and garnish with fresh thyme leaves.
  • Drizzle with balsamic glaze before serving.
