Ingredients

  • 3 medium beets, roasted and sliced into thick rounds Wrap in foil for even roasting.
  • 1 large pear, thinly sliced

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wrap each beet in aluminum foil and place on a baking sheet. Roast for about 45-50 minutes, or until tender.
  • Once roasted, let the beets cool, then peel and slice them into ½-inch thick rounds.

Sautéing

  • Heat olive oil in a pan over medium heat. Add the thinly sliced pear and drizzle with honey. Sauté for approximately 2 minutes per side until lightly golden and caramelized.

Assembly

  • Begin with a beet slice at the base, then add a sprinkle of blue cheese and a pear slice on top. Repeat these layers, finishing with a final layer of blue cheese.
  • Garnish with toasted pecans and fresh thyme sprigs. Drizzle with balsamic glaze just before serving.
  • Serve immediately while beets are warm and pears crispy.

Notes

To enhance the flavor of your blue cheese, let it sit at room temperature for about 30 minutes before serving. For a variation, substitute blue cheese with goat cheese.
