  • 3 medium medium beets Roasted and sliced into thick rounds.
  • 1 large pear Thinly sliced.
  • 1/2 cup crumbled blue cheese Adds depth and richness.
  • 1/4 cup toasted pecans Roughly chopped for crunch.
  • 1 tbsp honey Enhances caramelization of the pears.
  • 1 tbsp balsamic glaze Drizzled on top for tangy sweetness.
  • 1 tbsp olive oil Used for cooking the pears.
  • Fresh thyme sprigs For garnish.

Instructions

Roasting the Beets

  • Preheat your oven to 400°F (200°C). Wrap the beets in aluminum foil and place them on a baking sheet. Roast the beets for about 45–50 minutes or until tender when pierced with a fork. Allow to cool slightly, then peel and slice into 1/2-inch thick rounds.

Caramelizing the Pears

  • In a medium-sized pan, heat a tablespoon of olive oil over medium heat. Add the thinly sliced pear and drizzle with honey. Cook for about 2 minutes on each side until golden and softened slightly.

Building the Towers

  • Place a slice of roasted beet on your serving plate. Top with a sprinkle of blue cheese, followed by a slice of caramelized pear. Repeat based on your desired height, finishing with a generous layer of blue cheese.

Garnishing and Serving

  • Sprinkle toasted pecans over the towers and add fresh thyme sprigs. Drizzle with balsamic glaze to enhance the flavors. Serve immediately.

Notes

Make ahead: Roast beets a day in advance. For variations, substitute goat cheese for a milder flavor or walnuts for pecans. Wear gloves when peeling beets to avoid staining hands.
