Instructions

Preparation

  • Heat your oven to 400°F (200°C). Toss the beets in olive oil, ensuring they are well coated. Wrap the beets in aluminum foil and place them on a baking sheet. Roast for 45–60 minutes until tender. Allow them to cool before peeling and grating.
  • In a medium-sized bowl, combine the softened goat cheese, grated beets, honey, garlic powder, and black pepper. Stir until smooth and creamy.
  • Lay a piece of plastic wrap on your countertop. Spoon the goat cheese and beet mixture onto the center and roll it into a log shape. Wrap it tightly and refrigerate for at least one hour.
  • Mix chopped pistachios and parsley in a small bowl while the log chills.
  • After chilling, unwrap the log gently and roll it in the pistachio and parsley mixture. Slice it into rounds and serve on a platter with crackers, crostini, or veggie sticks.

Notes

For added flavor, try adding a pinch of smoked paprika to the goat cheese mixture. Feel free to experiment with different herbs or nuts based on preference.
