Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wrap each beet in foil and place them in the oven. Roast for about 45–60 minutes until they’re tender.
  • Once the beets are roasted, allow them to cool slightly. Peel off the skin and finely dice the beets.
  • In a mixing bowl, combine the crumbled goat cheese, chopped chives, fresh dill, garlic powder, kosher salt, black pepper, and lemon juice. Mix until well combined.
  • Lay out a piece of plastic wrap on a clean surface. Spread the cheese mixture into a rectangle shape.
  • Sprinkle the diced beets evenly over the cheese mixture. If using, add walnuts or dried cranberries on top.
  • Carefully roll the cheese mixture along with the beets into a log shape using the plastic wrap. Seal the ends tightly.
  • Place the log in the refrigerator and chill for at least one hour.

Serving

  • Remove the log from the refrigerator, unwrap it, and slice it into rounds. Serve with crackers, bread, or vegetable sticks.

Notes

This log can be made a day in advance. For variations, consider using different herbs, or adding honey for sweetness just before serving.
