  • 2 large roasted red bell peppers Fresh or jarred
  • 8 oz feta cheese, crumbled Use high-quality for creamier texture
  • 1/4 cup Greek yogurt or sour cream Choose based on preference
  • 1 clove garlic, minced For aromatic punch
  • 1 tbsp lemon juice Adjust to taste
  • 2 tbsp olive oil Extra for garnishing
  • 1/2 tsp dried oregano Enhances flavor
  • 1/4 tsp red pepper flakes Optional, for spice

  • 1 drizzle honey Optional for sweetness

Instructions

Preparation

  • Roast the Peppers (if using fresh): Preheat the oven to 450°F (230°C). Place whole bell peppers on a baking sheet lined with parchment paper and roast for about 25-30 minutes, turning occasionally. Once charred, remove from the oven and cool before peeling the skin and removing seeds.
  • Blend the Dip: In a food processor, add the roasted red peppers, crumbled feta cheese, Greek yogurt (or sour cream), minced garlic, lemon juice, olive oil, oregano, red pepper flakes, and black pepper. Blend until smooth and creamy.
  • Adjust & Garnish: Taste the dip and adjust seasoning as needed. Transfer to a serving bowl and drizzle with olive oil, and optionally honey. Sprinkle fresh herbs on top.
  • Serve & Enjoy: Pair with warm pita bread, crackers, or vegetables. It also works well as a spread for sandwiches or wraps.

Notes

Chill the dip before serving for enhanced flavor. Can store in an airtight container in the fridge for up to 5 days.
