Instructions

Preparation

  • Toss the beef cubes in flour until completely coated.
  • In a Dutch oven, heat 1 tablespoon of canola oil over medium heat.
  • Add the beef in batches, searing until browned on all sides, then set aside.

Cooking

  • In the same pot, sauté the diced shallot for 2–3 minutes until translucent.
  • Add minced garlic and cook for an additional minute.
  • Combine fire-roasted red bell peppers, tomato paste, beef broth, Worcestershire sauce, and the seared beef.
  • Bring to a rolling boil.
  • Reduce heat to low, cover the pot, and let simmer for about 1 hour.
  • After an hour, stir in the cream of mushroom soup and let it simmer uncovered for an additional 30 minutes.

Notes

For maximum flavor, consider marinating the beef overnight in Worcestershire sauce and herbs. Add fresh herbs like thyme or rosemary during simmering for robust flavor. Adjust spices according to your preference.
