Ingredients

For the Salmon Bites

  • 1 lb salmon fillet, skin removed and cut into small cubes
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1 tbsp lemon juice (freshly squeezed)
  • Salt and black pepper, to taste
  • 1 tbsp fresh parsley, chopped (for garnish)

For the Orzo

  • 1 cup orzo pasta
  • 2 tbsp unsalted butter, divided
  • 2 cloves garlic, minced
  • 1 piece zest of 1 lemon
  • 1 tbsp juice of 1 lemon
  • 1/4 cup Parmesan cheese, grated
  • 1 1/2 cups low-sodium chicken broth (or water)

Instructions

Cook the Orzo

  • Melt 1 tablespoon of unsalted butter in a saucepan over medium heat.
  • Stir in the orzo and toast for about 2 minutes until it turns golden brown.
  • Pour in 1 1/2 cups of chicken broth (or water) and bring it to a boil.
  • Once boiling, reduce the heat to low, cover, and let it simmer for 8–10 minutes, stirring occasionally until the orzo is tender.
  • Mix in minced garlic, lemon zest, lemon juice, the remaining 1 tablespoon of butter, and grated Parmesan cheese. Season with salt and pepper, then cover and keep warm.

Cook the Salmon Bites

  • Toss the salmon cubes in a bowl with olive oil, garlic powder, paprika, salt, and black pepper.
  • Heat a nonstick skillet over medium-high heat and add the seasoned salmon.
  • Sear the cubes for about 2–3 minutes on each side until they become golden and are cooked through.
  • Drizzle the salmon with fresh lemon juice for an added burst of flavor before removing from heat.

Assemble and Serve

  • Spoon the creamy lemon butter orzo onto serving plates.
  • Top each dish with the perfectly seared salmon bites.
  • Garnish with chopped parsley and an additional sprinkling of lemon zest for a stunning presentation.

Notes

For added flavor, consider marinating the salmon cubes in olive oil, lemon juice, and spices for approximately 30 minutes before cooking. For texture, add spinach or cherry tomatoes during the last steps of orzo cooking. A pinch of red pepper flakes can add heat.
