Ingredients

For the Phyllo Crust

  • 1 large egg Binding everything together to create a harmonious filling.
  • 2 tbsp Greek yogurt Tart and refreshing, enhancing the filling's flavor and texture.
  • Zest of 1 lemon Bright and aromatic, lending zesty freshness.
  • 1 tsp culinary dried lavender buds Delicate and floral, infusing the cheesecake with a unique essence.

For the Drizzle and Garnish

  • 2 tbsp lavender-infused honey Sweet and aromatic, enhancing flavors.
  • 1 tsp warm water (to thin, optional) For a drizzle-able consistency of the honey.

Instructions

Prepare the Phyllo Crusts

  • Preheat your oven to 180°C (350°F). Unfold the phyllo sheets and brush each with melted butter, sprinkling crumbled feta evenly over each. Stack and press into a mini muffin tin, creating cups.
  • Bake for 10–12 minutes until golden brown and crispy.

Make the Filling

  • In a mixing bowl, combine softened cream cheese, whipped ricotta, and egg. Beat until smooth.
  • Add Greek yogurt, lemon zest, lavender buds, salt, and pepper. Stir until well combined.
  • Spoon the filling into the cooled phyllo cups, letting it overflow slightly.

Bake

  • Return to the oven for another 12–15 minutes until puffed and slightly set. Allow cooling before drizzling.

Drizzle and Garnish

  • Warm the lavender-infused honey slightly in the microwave and drizzle over the cooled cheesecake bites.
  • Garnish with fresh thyme leaves or microgreens, and optional cracked pink pepper or crushed pistachios before serving.

Notes

Keep phyllo covered with a damp cloth to prevent drying. Be cautious not to over-bake the crust, and ensure all filling ingredients are well combined.
