  • 1 (14.5 oz) can sauerkraut, drained Provides tang and depth

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×13-inch or 11×7-inch baking dish.
  • Cut 4 slices of rye bread into cubes and spread them evenly across the bottom of the greased baking dish.
  • Process the remaining 2 slices of rye bread into breadcrumbs and set aside.
  • Layer half of the sliced pastrami or corned beef over the bread cubes.
  • Distribute the drained sauerkraut over the meat layer, followed by the chopped dill pickles and 1 teaspoon of caraway seeds.
  • Sprinkle 2 cups of shredded Swiss cheese over the sauerkraut layer.
  • Add the remaining slices of meat on top and press down lightly, then finish with the remaining shredded cheese and another teaspoon of caraway seeds.
  • In a mixing bowl, whisk together the milk, beaten eggs, yellow mustard, and creamy dressing until smooth.
  • Pour the milk mixture over the layered ingredients in the baking dish.
  • Top with the breadcrumbs set aside and cover the dish tightly with foil.
  • Bake for 45 minutes; allow to rest for 5 minutes before serving.

Notes

For a deeper flavor, consider toasting the rye bread. You can customize the dish using different cheeses or adding vegetables. Serve with extra Thousand Island dressing on the side.
