  • 6 pieces russet or Yukon Gold potatoes, sliced 1/8-inch thick
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3 tbsp salted butter
  • 1 pieces yellow onion, thinly sliced
  • 3/4 cup shredded Gruyere cheese
  • 3/4 cup shredded cheddar cheese
  • 1 clove garlic, chopped
  • 1 tbsp chopped fresh thyme
  • 1 pinch cayenne pepper
  • Kosher salt, to taste
  • Black pepper, to taste

Instructions

Preheat the Oven

  • Preheat your oven to 350°F (175°C).

Prepare the Onions

  • In a skillet over medium-high heat, melt the salted butter. Add your sliced yellow onions and cook for about 10 minutes until they soften. Keep cooking for another 5 minutes, stirring occasionally, until the onions caramelize and turn golden brown.

Add Aromatics

  • Stir in the chopped garlic, fresh thyme, kosher salt, and freshly cracked black pepper. Cook for an additional 2 minutes to blend the flavors, then remove the skillet from the heat to cool slightly.

Create the Cream Mixture

  • In a large mixing bowl, combine the heavy cream, whole milk, cayenne pepper, salt, and black pepper. Mix well and fold in the shredded Gruyere cheese.

Layer the Potatoes

  • Grease a 9x13 baking dish with butter. Pour in one-third of the cream mixture, followed by one-third of the sliced potatoes, and half of the caramelized onions. Repeat until all ingredients are used, ending with a final layer of potatoes topped with the remaining cream mixture.

Bake Covered

  • Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 1 hour and 45 minutes to 2 hours.

Finish with Cheddar

  • Once the baking time is complete, remove the foil and sprinkle the shredded cheddar cheese evenly over the top. Return to the oven and bake uncovered for another 20 minutes.

Serve and Enjoy

  • Remove from the oven, allow to cool for a few minutes, and serve. Top with additional fresh thyme.

Notes

For uniform potato slices, a mandoline slicer can be used. Feel free to experiment with different cheeses, and prepare the dish a day in advance, storing it in the fridge before baking. Adding fresh herbs like rosemary or parsley can enhance flavor.
