Instructions

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the ground beef and cook until browned, breaking apart with a spoon. Drain excess grease if necessary.
  • Add the diced onion, chopped carrots, and celery. Cook for 5-7 minutes until vegetables start to soften.
  • Pour in the beef broth, Worcestershire sauce, dried thyme, salt, and black pepper. Stir and bring to a boil.
  • Reduce heat and let it simmer for 20-25 minutes.
  • Stir in the frozen peas and let cook for an additional 5 minutes.
  • Ladle soup into bowls and top with prepared mashed potatoes.
  • Garnish with freshly chopped parsley.

Notes

This soup is customizable with seasonal vegetables like corn or bell peppers. You can also add leftover mashed potatoes to save time. For a spicy kick, add red pepper flakes while cooking the beef.
