Ingredients

For the meat mixture

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 lb ground beef
  • 1 can (15 oz) sloppy joe sauce
  • to taste Salt and pepper
  • 1.5 cups shredded cheddar cheese

For the biscuit topping

  • 2 cups biscuit mix (like Bisquick)
  • 2/3 cup milk
  • 2 tbsp melted butter
  • to taste Fresh chopped parsley for garnish (optional)

Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish to prevent sticking.
  • In a large skillet over medium heat, add the olive oil and sauté the finely chopped onion until it becomes soft and translucent.
  • Add the ground beef to the skillet, cooking until it’s nicely browned. Drain any excess grease.
  • Stir in the sloppy joe sauce and let it simmer for about 3–5 minutes. Season generously with salt and pepper.
  • Pour the mixture into the prepared baking dish and sprinkle the shredded cheddar cheese over the top.

Biscuit topping

  • In a separate bowl, mix the biscuit mix and milk until just combined. Lumps are okay.
  • Drop spoonfuls of the biscuit dough over the cheesy meat mixture.

Baking

  • Bake uncovered for 20–25 minutes, or until the biscuits are golden brown.
  • Once baked, brush the tops with melted butter and sprinkle with fresh parsley if desired.

Notes

For added flavor, consider mixing in a teaspoon of garlic powder or paprika to the beef while cooking. You can customize your casserole by adding in bell peppers, mushrooms, or corn for extra veggies. If you don’t have biscuit mix, you can make a homemade version using flour, baking powder, and a pinch of salt!
