Preparation

  • Sear the brisket: Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the beef brisket on all sides for about 2-3 minutes each, then move it to the slow cooker.
  • Prepare the veggies: In the same skillet, add the sliced onion and minced garlic. Sauté until softened, about 3-4 minutes.
  • Create the sauce: In the skillet, combine beef stock, BBQ sauce, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, and thyme. Stir and let simmer for a minute.
  • Combine ingredients: Pour the sauce mixture over the brisket in the slow cooker. Season with salt and pepper.
  • Set the slow cooker: Cover and cook on low for 8-10 hours.
  • Rest and serve: Let the brisket rest for 10 minutes before slicing. Serve hot with sauce from the slow cooker.
