Instructions

Searing the Brisket

  • Heat olive oil in your slow cooker if it has a sauté/sear mode; if not, use a large skillet over medium-high heat. Carefully sear the brisket for 3-4 minutes on each side until it’s beautifully browned. Remove the brisket from the heat and set it aside.

Cooking the Onions & Garlic

  • In the same pot, add the sliced onions and minced garlic. Sprinkle with salt and sauté for about 4 minutes, allowing the onions to soften and become translucent.

Making the Sauce

  • Pour in the balsamic vinegar and beef stock. Add dried thyme, rosemary, and black pepper. Stir everything together to create a cohesive sauce, then return the seared brisket to the slow cooker, ensuring it’s coated with the sauce.

Slow Cooking

  • Cover the slow cooker and cook on the LOW setting for 9-10 hours or on HIGH for 4 hours, until the brisket is tender enough to be easily pulled apart with a fork.

Preparing the Gravy

  • Once the brisket reaches the desired tenderness, remove it from the slow cooker. Transfer the cooked onions and sauce to a saucepan over high heat. Stir in honey and allow the sauce to reduce and thicken for about 8-10 minutes.

Serving

  • Slice the brisket against the grain into 1/2-inch thick slices. Generously spoon the balsamic onion gravy over the sliced brisket and serve with your favorite sides for a delightful meal.
