Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, combine the sliced smoked sausage, halved baby potatoes, and chopped onion.
  • Drizzle olive oil over the mixture, sprinkle garlic powder, smoked paprika, and season with salt and pepper. Toss to coat evenly.
  • Spread the mixture in a greased or foil-lined baking dish.

Cooking

  • Bake for about 35-40 minutes, stirring halfway through, until the potatoes are tender and golden and the sausage is browned.

Serving

  • Remove from the oven and garnish with fresh parsley before serving.
