  • 2 eggs egg whites The backbone of the nougat’s light and airy texture.
  • 1 cup toasted almonds Adds a delightful crunch and nutty flavor.
  • 1 cup toasted pistachios or mixed nuts For color and a variety of textures.
  • 1 teaspoon vanilla extract or citrus zest An optional yet delicious twist.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and toast the nuts for 8–10 minutes.
  • In a medium saucepan, heat the honey over medium heat until it reaches 250°F (120°C).
  • In another small saucepan, combine the sugar and water, and heat until it reaches 300°F (150°C).
  • Beat the egg whites in a mixing bowl until soft peaks form.
  • Slowly pour the hot honey into the egg whites while mixing continuously.
  • Once the honey is incorporated, pour in the sugar syrup while mixing. Fold in the toasted nuts and optional flavorings.
  • Line a small dish or baking pan with parchment paper and spread the mixture evenly, pressing it down firmly.
  • Allow the Torrone to cool and set at room temperature for about 4 hours, then slice into bite-sized pieces.

Notes

Use a candy thermometer for accurate temperature control and consider light greasing of the parchment paper for easier removal.
