Instructions

Preparation

  • Preheat the oven to 175°C (350°F). Grease and line a standard loaf pan.
  • In a bowl, whisk together sweet potato, brown sugar, oil, eggs, and vanilla until smooth.
  • In another bowl, sift flour, baking powder, baking soda, salt, and spices.
  • Fold the dry ingredients into the wet ingredients until just combined.
  • Pour the batter into the prepared pan.

Baking

Frosting

  • Beat cream cheese and butter until creamy.
  • Add powdered sugar, vanilla, and salt, then beat until fluffy.
