  • 1/2 piece lemon (zest) Brightens flavors.
  • 3 tbsp honey Nature’s sweetener.
  • 1/2 tsp red chili flakes Adds warmth.
  • pinch salt Balances flavors.
  • 3 tbsp crushed pistachios Adds crunch.

Instructions

Preparation

  • Roll out your chilled puff pastry onto a sheet of parchment paper, ensuring it remains cold. Score a border of about 1 inch from the edge.
  • In a medium bowl, combine the sliced peaches, cornstarch, brown sugar, vanilla extract, and lemon zest. Toss gently.

Assembly and Baking

  • Layer the peach slices inside the scored border of the pastry, overlapping for a floral pattern.
  • Warm honey gently with red chili flakes in a small saucepan. Drizzle half over the arranged peaches.
  • Brush the edges of the pastry with egg wash and optionally sprinkle turbinado sugar. Bake at 200°C (400°F) for 25–30 minutes.
  • Once out of the oven, drizzle remaining hot honey over peaches and scatter crushed pistachios. Allow to cool slightly before serving.

Notes

Serve warm or at room temperature. Pairs well with vanilla ice cream or whipped cream.
