Instructions

Prepare the Dressing

  • In a small bowl, whisk together the balsamic vinegar, honey, and olive oil until the mixture is smooth. Add salt and pepper to taste.

Toast the Pecans

  • Heat a dry skillet over medium heat and add the pecans. Stir them often for about 3–4 minutes until they become fragrant. Be careful not to overcook them, then remove from heat and allow to cool.

Assemble the Salad

  • In a large serving bowl, spread out the fresh baby spinach. Evenly scatter the blueberries, raspberries, and mandarin orange segments over the spinach layer.
  • Top your salad with the toasted pecans and crumbled feta.
  • Just before serving, drizzle on the honey-balsamic dressing and toss gently to ensure that all components are coated evenly.

Notes

For an extra flavor boost, experiment with flavored olive oils such as garlic or herb-infused varieties. Substitute walnuts or almonds for pecans if desired.
