Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 12-cup muffin tin with butter or olive oil spray.
  • In a mixing bowl, whisk the eggs, milk, salt, and pepper together until smooth and frothy.
  • If desired, sauté the spinach and garlic in a skillet over medium heat for 1-2 minutes until wilted.

Assembly

  • Distribute the spinach, feta, and green onions evenly in the muffin cups.
  • Pour the egg mixture into each muffin cup, filling about 3/4 full, and gently stir each cup with a fork.

Baking

  • Bake for 18-22 minutes until puffed and set in the center.
  • Let muffins cool in the tin for 5 minutes, then transfer to a wire rack.

Notes

For protein-packed muffins, add diced cooked chicken. Experiment with cheeses like goat cheese or cheddar. Use pre-packaged or frozen spinach for convenience.
