Ingredients

For the Spicy Ginger Dressing

For the Salad

  • 1 small cucumber, sliced into matchsticks refreshing and crisp
  • 1 1/2 cups shredded purple or green cabbage the perfect base for crunch

Instructions

Prepare the Spicy Ginger Dressing

  • In a blender, combine the ginger, garlic, soy sauce, agave nectar, rice vinegar, sesame oil, canola oil, and crushed red pepper flakes. Blend until smooth and chill in the refrigerator for about 15 minutes.

Cook the Rice Noodles

  • Bring a pot of water to a boil and cook the rice noodles according to package instructions. Drain and rinse under cold water to stop the cooking process.

Assemble the Salad

  • In a large mixing bowl, add the cooled rice noodles, shredded cabbage, cucumber, carrot strips, sliced bell pepper, cilantro, and minced mint. Toss gently to combine.

Dress the Salad

  • Pour the Spicy Ginger Dressing over the salad mixture and toss until thoroughly coated.

Finishing Touches

  • Sprinkle roasted peanuts and additional cilantro on top before serving. Serve immediately.
