Instructions

Preparation

  • Pat the feta dry with paper towels to achieve a beautiful sear.
  • Heat olive oil in a small cast iron or oven-safe skillet over medium heat until shimmering.

Cooking

  • Gently place the block of feta in the hot skillet, searing for 2-3 minutes per side for a golden exterior.
  • Whisk together honey, chili crisp or oil, apple cider vinegar (or lemon juice), smoked paprika, and optional crushed red pepper flakes to prepare the glaze.
  • Pour the glaze over the seared feta, tilting the skillet to ensure even coating.
  • Simmer for 2-3 minutes until the glaze bubbles and thickens.

Serving

  • Remove skillet from heat, garnish with fresh herbs, and serve immediately with crusty or flatbread.
