Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and prepare two 8-inch round cake pans by greasing and flouring them.
  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each. Follow with vanilla extract and mashed bananas, stirring until blended.
  • In another bowl, whisk the all-purpose flour, baking powder, and salt. Gradually incorporate this mixture into the wet ingredients, alternating with the milk until smooth and combined. Divide the batter between the prepared pans, smoothing the tops.

Baking

  • Bake cake layers for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow layers to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Strawberry Filling

  • In a saucepan over medium heat, combine chopped strawberries, granulated sugar, lemon juice, and cornstarch. Stir until thickened, then remove from heat and cool completely.

Banana Cream Filling

  • Whip heavy cream with powdered sugar and vanilla until soft peaks form. Fold in remaining mashed bananas.

Frosting

  • Beat softened butter until creamy, then gradually add powdered sugar, milk, and vanilla extract. Divide frosting into two bowls; tint one with pink food coloring and the other with yellow.

Assembly

  • Place one cake layer on a serving plate and spread strawberry filling on top. Add the second layer and spread banana cream over it. Frost sides and top with pink crumb coat; refrigerate to set.
  • Once set, apply a final layer of frosting and smooth out for a polished look.
  • Decorate with fresh strawberries and sliced bananas on top, arranging edible flowers or fairy tale decorations if desired.
