Instructions

Preparation

  • Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan.
  • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom of the prepared pan.

Cheesecake filling

  • In a large bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and strawberry puree.
  • Pour the cheesecake mixture over the crust, spreading evenly.
  • Bake for 55-60 minutes or until the center is almost set. Cool on a wire rack for 10 minutes.
  • Run a knife around the edge to loosen and cool completely before removing the sides.

Ganache preparation

  • In a small saucepan, heat the heavy cream until simmering. Remove from heat and pour over dark chocolate chips. Stir until smooth.
  • Pour the ganache over the cooled cheesecake, spreading it evenly.

Strawberry topping

  • In a bowl, combine fresh strawberries, sugar, and lemon juice. Let sit for about 10 minutes.
  • Arrange the strawberry topping over the ganache layer and refrigerate for at least 4 hours before serving.

Tip: For a creamier texture, ensure cream cheese is at room temperature. You can substitute dark chocolate with milk chocolate for a sweeter ganache.
