Ingredients

  • ½ cup vegetable oil For added moisture and fluffiness.
  • ¼ cup milk This helps to keep the cake tender and light.

For the Glaze

  • 2 cups powdered sugar This is for the glaze, ensuring it's sweet and creamy.
  • 3 tbsp strawberry puree Enhances the strawberry flavor in the glaze.
  • 1 tbsp lemon juice Adds brightness and balances the sweetness.
  • optional: pink gel food coloring Use for a richer pink hue if desired.

Instructions

Preparation

  • Preheat your oven to 175°C (350°F) and grease and flour a 9x13 inch pan.
  • In a large bowl, mix together the cake mix, gelatin, eggs, vegetable oil, milk, and mashed strawberries until well combined.

Baking

  • Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool completely in the pan before glazing.

Glazing

  • Whisk together the powdered sugar, strawberry puree, and lemon juice in a separate bowl until smooth.
  • Once the cake has cooled, pour the glaze evenly over the top, allowing it to drip down the sides.
  • Top with halved strawberries just before serving.

Notes

For an extra touch of flavor, consider incorporating a splash of vanilla extract into the batter. You can also use frozen strawberries, but make sure to thaw and drain them well before mashing. For a better presentation, use a serrated knife to cut the cake.
