Ingredients

For the Filling

For the Glaze

  • 1 cup powdered sugar For a sweet finish.

Instructions

Prepare the Filling

  • In a small saucepan over medium heat, combine the diced strawberries, granulated sugar, cornstarch, vanilla extract, and lemon juice. Stir continuously for about five minutes until the mixture thickens and becomes syrupy. Remove from heat and let cool completely.

Assemble the Hand Pies

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Roll out your chilled pie crusts.
  • Use a cookie cutter to create heart-shaped pieces. Place a small spoonful of the cooled strawberry filling into the center of half the heart shapes.
  • Top with the remaining heart-shaped dough, pressing the edges firmly with a fork to seal. In a separate bowl, whisk together the egg and water, then brush this egg wash over the top of the pies.

Bake & Glaze

  • Place your assembled hand pies into the preheated oven and bake for 15-18 minutes, or until golden brown.
  • Allow to cool for 10 minutes, then whisk together the powdered sugar, milk, and vanilla for the glaze. Drizzle or brush this over the cooled pies.

Notes

Use ripe strawberries for maximum flavor. Allow the filling to cool before assembly to prevent soggy crusts. Ensure proper sealing of edges to avoid leaks during baking.
