Ingredients

Instructions

Preparation

  • Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
  • In a bowl, combine crushed shortbread cookies, 1/4 cup sugar, and melted butter. Mix until well combined, then press firmly into the bottom of the prepared pan.

Making the cheesecake

  • In a large mixing bowl, beat the softened cream cheese, 1 cup sugar, and vanilla extract until smooth.
  • Add the eggs one at a time, mixing well after each addition. Stir in the sour cream until well incorporated.
  • Pour the cheesecake filling over the prepared crust and smooth out the top.

Baking

  • Bake for 50-60 minutes, or until the center is almost set but still slightly jiggly.
  • Allow to cool completely, then refrigerate for at least 4 hours or overnight.

Preparing the topping

  • In a saucepan, combine sliced strawberries, 1/4 cup sugar, cornstarch, and water. Heat over medium, stirring until the mixture thickens.
  • Allow topping to cool before spreading it over the chilled cheesecake.

Serving

Notes
