Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Toss the carrots in a bowl with the olive oil, salt, and pepper, then spread them out in a single layer on the baking sheet.

Cooking

  • Roast the carrots for 25-30 minutes, flipping halfway through until they are tender with caramelized edges.
  • In a saucepan, combine the gochujang, honey, soy sauce, rice vinegar, sesame oil, and grated garlic. Whisk over medium heat for about 2-3 minutes until it thickens slightly.
  • Set the glaze aside and allow the roasted carrots to finish cooking.

Assembly

  • In a bowl, mix the Greek yogurt with lemon zest, garlic powder, and a pinch of salt, then spread it on your serving platter.
  • Toss the roasted carrots in the warm glaze until evenly coated.
  • Layer the glazed carrots over the yogurt, then sprinkle with toasted sesame seeds, fresh cilantro, and optional scallions or chili.
