Ingredients

Taco Cupcake Shells

  • 12 pieces small flour or corn tortillas (or wonton wrappers) Use corn tortillas for added crunch.
  • 1 can cooking spray or olive oil spray For greasing the muffin tin.

Taco Filling

  • 1 tbsp olive oil For cooking the meat.
  • 1 lb ground beef or ground turkey Choose based on preference.
  • 1 packet taco seasoning Use store-bought or homemade.
  • 1/2 cup tomato sauce or salsa Adjust for desired spiciness.
  • 1/4 cup water To help with cooking the meat mixture.

Toppings

  • 1 cup shredded cheddar cheese For topping the cupcakes.
  • 1 cup sour cream For serving on top.
  • 1/4 cup red onion, finely diced For added crunch.
  • 1/4 cup tomato, diced Freshness for garnishing.
  • 1/4 cup green bell pepper, diced For vibrant color and flavor.
  • to taste fresh cilantro Optional garnish.

Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and lightly spray a 12-cup muffin tin with cooking spray.
  • Warm the tortillas slightly until soft, then cut them into circles around 4 inches wide and press them into the muffin cups to form little cups.

Cooking the Filling

  • Heat olive oil in a skillet over medium heat. Add the ground beef or turkey and cook until browned.
  • Drain excess fat and add taco seasoning, tomato sauce, and a splash of water. Simmer for 3-4 minutes.

Assembling and Baking

  • Spoon 2-3 tablespoons of taco meat into each tortilla cup and top generously with shredded cheese.
  • Bake in the preheated oven for 10-12 minutes until the edges of the tortillas are golden and the cheese is melted.

Garnishing

  • Let cool slightly, then pipe or spoon sour cream on top. Garnish with diced red onion, tomato, bell pepper, and optional cilantro.

Notes

Consider making your own taco seasoning or using corn tortillas for extra crunch. These cupcakes can be customized with various toppings and can be made vegetarian with beans or lentils.
