Preparation

  • Cook the macaroni in a pot of salted boiling water until it’s al dente. Drain and set aside.
  • In a large pan, add a splash of butter or olive oil and sauté the sliced leek and mushrooms for about 5-7 minutes until softened.
  • Add the cooked chicken strips to the pan, stir gently, and heat through.
  • Slowly pour in the heavy cream, stirring to incorporate. Let simmer for about 3-4 minutes until thickened.
  • Add the drained macaroni to the mixture and toss until well combined. Season with salt and pepper to taste.
  • Transfer to a baking dish. Optionally sprinkle extra cheese on top. Bake in a preheated oven at 375°F (190°C) for 15–20 minutes until golden and bubbly.

Notes

Consider adding garlic or fresh herbs for extra flavor. Leftovers can be stored in the fridge for up to three days, or frozen for longer storage. For a vegetarian option, substitute chicken with more vegetables.
