Ingredients

Focaccia Dough Ingredients

  • 500 g all-purpose flour Provides a tender and airy base that beautifully absorbs flavors.
  • 2 tsp instant yeast This quick-acting yeast ensures a light and fluffy rise.
  • 2 tsp sugar Enhances the fermentation process, resulting in a slightly sweet bread.
  • 1.5 tsp salt Balances flavors and enhances the overall taste.
  • 325 ml warm water Activates the yeast and hydrates the dough, contributing to its softness.
  • 50 ml olive oil Adds richness and depth to the dough.

Filling Ingredients

  • 1 whole Camembert wheel (boxed) Creamy, soft, and full of flavor; its meltiness completes the dish.
  • 1 clove garlic, thinly sliced Infuses a subtle, aromatic warmth throughout.
  • few rosemary sprigs Offers fresh herbal notes that elevate the bread’s flavor.
  • Optional: A drizzle of honey or chili flakes for a sweet or spicy twist, flaky sea salt, and fresh rosemary or thyme for garnishing.

Instructions

Preparation

  • In a large bowl, combine the all-purpose flour, instant yeast, sugar, and salt. The flour should appear light and fluffy.
  • Gradually mix in the warm water and olive oil until a sticky dough forms.
  • Transfer the dough onto a floured surface. Knead for about 8–10 minutes until smooth and elastic.
  • Place the kneaded dough in a lightly oiled bowl, cover with a kitchen towel, and let rise until doubled (about 1 hour in a warm environment).

Assembly

  • Preheat your oven to 200°C (390°F) and prepare a baking tray lined with parchment paper.
  • Punch down the risen dough and shape it into 16 to 20 small balls, arranging them in a circle around the Camembert in the center.
  • Cover with a towel and let rest for 20–30 minutes to puff slightly.
  • Score the top of the Camembert in a crisscross pattern. Add thin slices of garlic and rosemary into the cuts. Brush the dough balls with olive oil, and sprinkle with salt and additional herbs.

Baking

  • Place the tray in the oven and bake for 25–30 minutes until the focaccia is golden and the cheese is bubbling.
  • Let it cool for a few minutes on a serving board before tearing into it.

Notes

For healthier options, consider using whole wheat flour or adding vegetables like sun-dried tomatoes or olives. Serve with salad or dips for a full meal.
