Instructions

Preparing the Crust

  • Mix the crushed digestive biscuits or graham crackers with the melted butter and a pinch of salt in a large mixing bowl to create a wet, crumbly mixture. Press this mixture into the base of a 22 cm tart pan and chill in the refrigerator for about 10 minutes.

Brown the Butter

  • In a medium saucepan over medium heat, add the 100 g of unsalted butter for browning. Stir frequently until it turns a deep golden color, about 5–7 minutes.

Make the Filling

  • In a large mixing bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, heavy cream, salt, and vanilla extract until well combined. Slowly whisk in the warm browned butter.

Preheat the Oven

  • Preheat your oven to 220°C (428°F).

Fill and Bake

  • Place your chilled crust on a baking sheet. Pour the filling into the crust and bake for 30–35 minutes until the top is deeply browned and slightly cracked.

Cool and Serve

  • Remove the tart from the oven and let it cool. Serve at room temperature or lightly chilled.

Notes

Brown the butter carefully to avoid burning. Allow the crust to chill for optimal texture. Top with whipped cream or powdered sugar for an elegant touch.
