Tomato Preparation

Instructions

Preparation

  • Start by preheating your oven to 200°C (390°F).
  • In a bowl, toss the cherry tomatoes with olive oil, balsamic vinegar, and a pinch of salt.
  • Spread your seasoned tomatoes on a lined baking tray and roast them in the preheated oven for about 15–20 minutes.

Mixing

  • While the tomatoes roast, combine the softened cream cheese, ricotta, shredded mozzarella, grated Parmesan, minced garlic, dried oregano, salt, and pepper in a mixing bowl. Mix until smooth.

Assembly and Baking

  • In a small oven-safe dish, spread the cheese mixture evenly.
  • Once the tomatoes are done roasting, spoon them generously over the cheese layer.
  • Return the assembled dip to the oven and bake at 190°C (375°F) for an additional 20 minutes.

Garnishing and Serving

  • Once out of the oven, top the dip with fresh basil ribbons and drizzle a little extra olive oil, if desired.
  • Serve hot alongside toasted baguette slices or crispy crostini for dipping.
