Ingredients

For the dip

  • 1 handful almonds, roughly chopped For a delightful crunch.

Instructions

Preparation

  • Heat 3/4 cup of olive oil in a small pan over medium heat.
  • Toss in the thyme sprigs and let the aromatic oils release.
  • Stir in the chopped almonds and cook for 2–3 minutes until lightly golden.
  • Add the thinly sliced garlic and Aleppo pepper (if using) and cook for 1 minute.
  • Remove from heat and pour in the remaining 1/4 cup of olive oil.
  • Add the crumbled feta and chopped parsley to the mixture and mash gently with a fork.
  • Spoon the dip into a serving bowl and enjoy it warm with fresh bread.

Notes

For added flavor, try toasting the almonds before using them. You can also mix in other herbs if thyme is not available.
