Instructions

Preheat and Prepare

  • Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan.

Make the Crust

  • In a medium bowl, combine the chocolate cookie crumbs, 1/4 cup of sugar, and melted butter. Mix until fully incorporated, then press this mixture into the bottom of your prepared pan to create a solid crust.

Cream the Filling

  • In a large bowl, use an electric mixer to beat the softened cream cheese and 1 cup of sugar until smooth and creamy.
  • Melt the semisweet and milk chocolate chips either in the microwave or a double boiler. Allow the melted chocolate to cool slightly before adding it to the cream cheese mixture.
