Instructions

Preparation

  • Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan.
  • In a medium bowl, combine chocolate cookie crumbs, sugar, and melted butter. Mix and press into the bottom of the prepared pan.

Make the filling

  • In a large bowl, beat cream cheese and granulated sugar until smooth.
  • Gradually add in eggs, beating well after each addition.
  • Stir in sour cream, heavy cream, melted chocolate, and vanilla extract until fully combined.

Assemble and Bake

  • Pour the cheesecake filling over the crust and smooth the top.
  • Bake for 60-70 minutes until the center is almost set. Turn off the oven and let cool for an hour.
  • Refrigerate for at least 4 hours or overnight before serving.

Prepare the ganache

  • Heat the heavy cream until just boiling. Pour over chopped chocolate and let sit for 2-3 minutes. Stir until smooth.
  • Allow the ganache to cool slightly.

Finish the cheesecake

  • Pour ganache over the chilled cheesecake and refrigerate until set.
