Instructions

Preparation

  • Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  • Combine chocolate cookie crumbs and melted butter in a bowl. Mix thoroughly, then press the mixture into the bottom of the prepared pan to form a solid crust.
  • In a large mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth.
  • Add eggs one at a time, beating well after each addition.

Mixing the Chocolate

  • Divide the batter into three portions. Stir melted semi-sweet chocolate into one portion.
  • Fold in the milk chocolate chips into the second portion.
  • Add the white chocolate chips to the last portion.

Layering and Baking

  • Pour the semi-sweet chocolate batter over the crust and spread evenly.
  • Layer the milk chocolate batter over the semi-sweet layer, then top with the white chocolate batter.
  • Bake for 50-60 minutes, or until the center is almost set. Let cool in the oven with the door slightly open for about 1 hour.
  • Refrigerate for at least 4 hours or overnight before serving.
