Instructions

Preparation

  • In a medium saucepan, combine the mashed bananas, crushed pineapple (with juice), and fresh lemon juice. Stir well to ensure that all ingredients are blended evenly.

Flavor Addition

  • Add the vanilla extract, ground cinnamon, salt, and granulated sugar to the banana and pineapple mixture.

Cooking

  • Place the saucepan over medium heat. Bring the mixture to a gentle boil while stirring frequently to prevent sticking.
  • Continue cooking for about 20-25 minutes until the jam thickens and darkens slightly.
  • You can draw a line through it on the back of a spoon to check if it’s ready.

Finishing Touch

  • Stir in the dark rum and let it simmer for an additional 5 minutes.

Storage

  • Remove from heat and allow the jam to cool slightly. Pour into sterilized jars, seal, and refrigerate. It will keep well for up to 3 weeks.
