Ingredients

Instructions

Preparation

  • Preheat your oven to 325°F (160°C).
  • In a mixing bowl, combine the graham cracker crumbs and melted butter, stirring until all crumbs are evenly coated. Press this mixture into the bottom of a springform pan.
  • In another bowl, using an electric mixer, beat the softened cream cheese with sugar until smooth and creamy.
  • Pour in the mango puree, followed by the eggs, vanilla extract, and lemon juice. Mix until well combined.
  • Pour the cheesecake filling into the crust-lined springform pan and spread evenly.

Baking

  • Bake for 50 to 60 minutes until the edges are set but the center is still slightly jiggly.
  • Remove from the oven and let cool at room temperature for about an hour, then refrigerate for at least four hours or overnight.

Serving

  • Slice into the cheesecake and serve. Optionally, decorate with fresh mango slices or mint leaves.
