For the Crispy Herb Feta Fries

Instructions

Make the Chicken Skewers

  • In a bowl, mix olive oil, shallot, garlic, oregano, chili powder, honey, harissa, lemon zest, salt, and pepper.
  • Add the chicken chunks to the marinade and stir well to ensure they are thoroughly coated. If time allows, marinate for 10 minutes.
  • While the chicken marinates, preheat your oven to 450°F (230°C).
  • After marinating, thread the chicken onto skewers. Arrange them on a baking sheet.
  • Bake the skewers for 20-25 minutes or until fully cooked through and slightly charred.

Make the Feta Fries

  • Toss the russet potatoes with olive oil, garlic powder, cayenne, and salt in a bowl.
  • Spread the potatoes evenly on a sheet pan in a single layer without overcrowding.
  • Bake for 15-20 minutes, then flip the fries and continue baking for another 15 minutes, or until crispy.
  • Mix mixed herbs, lemon zest, grated garlic, sesame seeds, and feta cheese in a separate bowl.
  • Once crispy, remove the fries from the oven and sprinkle the herb-feta mixture over them, tossing gently.

To Serve

  • Plate the Tzatziki Chicken Skewers alongside the Crispy Herb Feta Fries. Serve with tzatziki sauce and garlic tahini on the side.

Notes

For extra flavor in the chicken, marinate longer if possible. Ensure your oven is fully preheated for crispy fries. Fresh herbs can be substituted with dried herbs. Leftovers can be stored in an airtight container in the fridge for up to three days.
