Instructions

Preparation

  • Mix the softened butter with minced garlic (if using) in a small bowl. Spread the mixture on one side of each slice of bread.
  • In a small pan, heat over medium heat and toss in the diced bell peppers along with a pinch of salt and pepper. Sauté for about 2 minutes until slightly softened.

Assembly

  • On a clean board, place two slices of bread (butter side down). Layer half of your shredded cheese on top, followed by the sautéed bell peppers and fresh parsley. Add the remaining cheese on top to create a cheesy filling before closing it off with the other slice of bread (butter side up).

Cooking

  • Heat a non-stick skillet or griddle over medium heat. Place the sandwich on the skillet and grill for 3-4 minutes on each side. Press gently with a spatula while cooking until the bread is golden-brown and crispy.
  • Once done, slice the sandwich in half and serve warm.

Notes

For garlic infusion, mix garlic into the butter before spreading. Feel free to swap cheeses and add more veggies for variation.
